Protein Pumpkin Bars

These pumpkin bars are perfect for this time of year and with only 55 calories per bar, you don't have to feel so guilty if you eat more than just one.


~•~ INGREDIENTS ~•~

• ½ cup Xylitol Sugar or Stevia

• ½ cup Unsweetened applesauce

• 2 tsp. Ground Cinnamon

• 1 ½ tsp. Ground Ginger

• ½ tsp. Ground Clove

• 1 tsp. Baking powder

• 1 tsp. Baking Soda

• ½ tsp. Salt

• 2 tsp. Vanilla Extract

• 4 Large Egg Whites

• 1 – 15 oz. can of RAW Pumpkin

• 2 cups of Oat Flour

• 2 Scoops Vanilla Whey Protein

• ½ cup Almond Milk

• ½ cup Chopped Walnuts (optional)


GREEK YOGURT TOPPING (OPTIONAL)

• 3 tbsp of Plain Greek Yogurt (I prefer Chobani or Fage brand)

• 1 tbsp of cinammon

• 1 tbsp of Honey or Stevia

• 1 tbsp of pumpkin puree

**optional – 1 scoop of vanilla protein powder


~•~Directions~•~

1. Preheat the oven to 350.

2. Spray a 9 X 13 Pyrex dish with non-stick spray.

3. Combine first 11 ingredients and mix well.

4. Add the final 3 ingredients (4, if adding walnuts), and mix until incorporated.

5. Spread half the batter into the Pyrex dish.

6. Take 2 TB of cinnamon and 1/4 a cup of xylitol, mix together and sprinkle over the batter (to create middle cinnamon layer)

7. Pour remaining batter on top, bake for 30 minutes.

8. Makes 24 squares.

9. Let the bars cool and mix your greek yogurt topping, Spread a spoonful of the Greek Yogurt topping and savor the yumminess!
